Lancaster County Mini Peppers are this week’s Healthy Snack

Mini Peppers are sweeter than bell peppers.  The best way to eat one is to hold it like a strawberry and bite it off right below the stem.

Mini Peppers are low in calories and excellent sources of vitamins A, C, potassium, folic acid (for brain development), and fiber (helps to make us full).  Compared to green peppers, the red ones have almost 11 times more beta carotene (which is an antioxidant protecting your body) and 1.5 times more vitamin C (which helps cuts and wounds heal and boosts our immune system).
